Dutch Oven Cooking!

Wild Boar Roll-Ups

10 slices of bacon
10 thinly sliced pork filets
10 oz. dried apricot halves (cut in small slices)
¾ cup dried cranberries
3 Tbs. honey
1 cup fine breadcrumbs
2 Tbs. dried parsley
1 Tbs. all-purpose flour
1 Tbs. parmesan cheese (finely shredded)
1/2 tsp. sugar
3 tsp. Italian seasoning (mine has paprika, oregano, garlic powder, onion powder and pepper)
2 Tbs. shortening
2 eggs
10 toothpicks
1 cup apple juice

Don't let this name fool you. It does not have any wild game but this is a serious dish for the pork lover. In a bowl, mix bread crumbs, parsley, flour, cheese, Italian seasoning and sugar. Cut in shortening until mixture is fine crumbs. In a separate bowl mix apricots, cranberries and honey. In another dish beat 2 eggs lightly. Dip one side of the pork filets in the egg mixture and then the crumb mixture. Spoon ¾ cup of apricot mixture onto each pork fillet. Roll fillet (with fruit inside), wrap with a bacon strip and use a toothpick to secure the roll. Place in the bottom of Dutch Oven and add apple juice. Cook for approximately 1 hour at 350 degrees.

Aromas Eggplant Parmesan

1/2 cup seasoned dry bread crumbs
1/4 cup all-purpose flour
2 beaten eggs
1 large eggplant (peeled & sliced 1/2 inch thick)
1/3 cup grated parmesan cheese
1 cup shredded mozzarella cheese
2 Tbs. olive oil
1 jar of favorite meatless spaghetti sauce
1 Tbs. salt
3/4 Tbs. Italian spice mix
1/4 tsp. ground parsley
1/2 tsp. oregano

Wash, peel and slice eggplant (1/2 inch thick). Salt and let sit for 1 hour. In a bowl beat 2 eggs lightly. In a separate bowl, add breadcrumbs, flour and Italian spice mix. Rinse the eggplant and then dip each slice into the egg, then into flour and breadcrumb mixture. Cook in frying pan til lightly browned. Place eggplant in layers in Dutch Oven. Spread the Monterey cheese between layers. Pour spaghetti sauce over eggplant and add parmesan cheese over top. Then sprinkle oregano and ground parsley over top. Cook for approximately 45-50 minutes at 325 degrees.

Cowboy Shepherd Pie

3 cups ground beef
1 large onion
2 carrots (finely chopped)
2 Tbs. all-purpose flour
1 ¾ cup vegetable stock
Salt and pepper
1 can whole kernel corn (drained)
1 package frozen peas
3 stalkes of celery (finely chopped)
1 pkg. cornbread mix
½ can beer

Pre-cook meat and carrots for 5 minutes. Add celery and all-purpose flour and cook 2 more minutes. Add all other ingredients except cornbread and beer. In a separate bowl, mix cornbread mix and beer. Add on top of other ingredients in Dutch Oven. Cook in DO approximately 45-50 minutes at 325 degrees.

City Slicker (Vegetarian) Beans

1 can white Kidney Beans
1 can red Kidney Beans
¼ tsp. salt and pepper
¾ cup finely chopped sun-dried tomatoes
1 can sliced ripe olives (drained)
1 Tbs. dried oregano

Quick, easy, and tasty dish. Place all ingredients in Dutch Oven and cook approximately 30-40 minutes at 325 degrees.


Garry's Secret Tri Tip

1 medium-sized Tri Tip
1 large can pineapple and its juices
1 cup brown sugar
1 cup minced garlic
2 cups teriyaki sauce
Seasoning and spices
Red wine

The key to Tri Tip is marinating. I like to marinate my Tri Tip in the fridge or on ice for 24 hours before cooking. I like to use pineapple as it is a natural meat tenderizer. After marinating, you can just dump the marinade and all into the DO and cook for approximately one hour at 325 degrees, or less time if you like it closer to rare. I also like to add red wine to the marinade just before cooking.

Grandma's Green Beans

1lb. bacon (cut in 1 inch squares
2 lbs. fresh green beans
1 can mushroom soup
1/4 cup lemon juice

This recipe is like old country cooking, but I get asked to cook it over and over. You can cook the bacon the night before in a skillet and store it in the fridge in a plastic bag. Put all the ingredients in the DO and cook for approximately 35 minutes at 325 degrees.

San Joaquin Fruit Cobbler

Fruit filling
1 box white cake mix
1 cup flour
3/4 can 7-Up (or similar soft drink)
1 Tbsp. cinnamon

Cobblers are great in the Dutch Oven and you can use your favorite fruit filling. My personal favorites are blueberry or cherry. Apricots, peaches, apples and other fruits work just as well. To make clean up easier, first line your DO with aluminum foil. Put the fruit filling in first, then the cake mix and flour, then add 7-Up. Stir lightly so that some of your fruit filling comes upward and 7-Up is mixed with the cake mix and flour. Add cinnamon to the top of the mixture. Cook for approximately 45 minutes at 325 degrees.

If you lined the DO with aluminum foil, clean-up is simple. After the cobbler has been devoured, just lift the aluminum foil out of the DO and most of the mess goes away with it.

Come 'n Get It Beer Bread

1 cup sugar
4 Tbsp. melted butter
3 cups self-rising flour
1 can of favorite beer

To make clean up easier, first line your DO with aluminum foil. Mix all ingredients together and place batter in DO. Cook for approximately 45 minutes at 325 degrees. Serve with honey or butter.

Gilroy Chicken Dump

2 elephant garlic bulbs
1 whole chicken (cut up)
6 small potatoes 1 onion (chopped)
10 pearl onions
2 Tbsp. vegetable oil
1 cup wine
2 cups baby carrots
1 cup sliced mushrooms
1/2 tsp. pepper and salt

Thinly slice two elephant garlic bulbs and place in bottom of DO. Place chicken on top of garlic, followed by chopped onions, potatoes and carrots. Place remaining ingredients on top. Cook in DO for approximately 1 hour at 350 degrees

Martha's Favorite (Lemon Asparagus and Baby Carrots)

2 bunches fresh asparagus
1/2 lb. baby carrots
1 Tbsp. lemon juice
1 Tbsp. white wine
1/2 tsp. lemon pepper

Super simple yet a big favorite. Put all ingredients in DO. Cook for approximately 35 minutes at 325 degrees.

Joaquin Murietta's Pears To Die For

1 1/2 cups red wine
1 cup sugar
1/4 tsp. red food color
3 small pears

Peel the pears and slice in half. Cook the wine and sugar with lid off until sugar is dissolved. Then add the food coloring and lay the pears in the bottom of the DO. Replace lid and cook for approximately 35 minutes at 325 degrees.

Wagon Train Potatoes

1 cup bacon (cut in 1 inch squares)
3 medium-sized potatoes
1 onion 1 cup cheddar cheese
1/2 bell pepper
1 package frozen green peas

You can cook the bacon the night before in a skillet and place in the fridge in a baggie. Thinly slice potatoes and chop onion and bell pepper. Place all ingredients in DO and cook for approximately 35 minutes at 325 degrees. Yummy, yummy, yummy!

Southern Trio (Sweet Potatoes, Yam and Apples)

2 medium sized yams
2 medium sized sweet potatoes
4 medium sized apples
1/4 Tbsp. vegetable oil
1 cup of apple cider
1 1/2 tsp. nutmeg
3 tsp. cinnamon
1/4 tsp. salt
1 cup additional apple cider

Peel the yams, sweet potatoes and apples. Cut them into 1/4 inch slices, mix together and set aside. Place the vegetable oil, then 1 cup of cider in the bottom of DO. Then mix the next four ingredients in a separate bowl. Layer the fruit and potato mixture into four layers, pouring the liquid and spice mixture on each layer. Replace lid and cook for approximately 50 minutes at 325 degrees.

Napa Raison Bread Pudding

8 slices cinnamon raisin bread
4 eggs
2 cups milk
1 tsp. vanilla
1/4 cup sugar
1/4 cup butter (melted)
1/2 cup raisons
1 tsp. cinnamon

Cut the bread into 1 inch squares and place in bottom of DO. Mix the remaining ingredients and pour over bread. Replace lid and cook for approximately 50 minutes at 325 degrees.

Black-Eyed Jack Peas and Rice

2 packages of black-eyed peas
1 1/2 cups hot water
1/2 can beer
1/2 cup chopped bell pepper
1 medium Anaheim pepper (chopped)
2 Tbsp. Dijon Mustard
1 Tbsp. vegetable broth
1 can diced tomatoes
1/2 cup green onions
Big pinch of pepper and salt
3/4 cup of uncooked converted rice

Put all ingredients in DO. Cook for approximately 55 minutes at 325 degrees.
